I know that all birds have adapted through natural selection, but is there something specific about the finch that caught your attention?

Finches are special because they are an example of an adaptive radiation. Charles Darwin, David Lack and Peter and Rosemary Grant and other scientists have done a lot of work on how environmental factors cause evolution, speciation and diversification. Finches in the Galapagos island just happen to be far enough removed from the mainland that once they found the islands, they became genetically isolated and adapted to their island habitats.
There are lots of other groups like finches, such as the honeycreepers in Hawaii. The reasons finches are singled out is because they were the first example found.
